Founded in 2024, Lactique974 is the natural expansion of my cheese and wine pairing program. Since 2021, I have entertained over 1,000 guests at Maison Shaps and has hosted virtual pairings for clients in the United States. Lactique974 offers an array of services, including classic cheese and wine pairings, cheese and charcuterie boards and bespoke cheese experiences. With Lactique974, you can indulge in a unique and personalized cheese experience like no other.
Lactic : relating to or obtained from milk.
Malolactic fermentation : is a process in winemaking which ‘softens’ the acidity of wines through the conversion of harsh-tasting malic acid into softer lactic acid.
D974 : This route was created in 1937, and was the very first French wine route. It begins in Dijon and goes through the Cote de Beaune and Cote de Nuits.
